Endive is also known as escarole and chicory.

Juice (Juicing Grid or Grid #1)

Triturate and press in flat cloths.

Wash leaves thoroughly. The outside leaves may be used for juicing leaving the tender inside leaves for salads. The outer leaves contain much more juice. Fill the feed tube loosely with leaves, stem ends first before turning on the Norwalk. Use light pressure only. Do not wad up leaves as this will cause the pulp to become warm. Be sure to keep some material in the feed tube at all times to prevent throwback. When all the endive has been processed, leave the pusher in place until you have turned off the Norwalk.

Fill the center portion of a flat cloth with one cup of pulp. Fold into thirds and always press with two cloths.
