Norwalk’s Juice of the Month for December is Pineapple Juice. Here are some helpful tips for preparation of your pineapples.

The eyes of the pineapple must be removed before juicing as some are sharp and may poke holes through your flat cloth during juicing. Thinly slice and remove the outer layer of the pineapple, leaving as much of the fruit whole as possible, before slicing and removing the top and bottom. Cut the pineapple into 1 1/2 to 2 inch slices, keeping them the same size, if possible. If you see any brown spots in the slices, cut them out to ensure only the freshest part of the pineapple is being juiced. This will prevent oxidation, and will make your juice last longer.
