ASPARAGUS (Asparagus officinalus)
April and May are the best months for this member of the Lilly of the valley family. Look for firm, straight stalks with well-formed, tightly closed tips. Try to use within 2-3 days.
The green varieties contain much more nutrient than the white.
Use the juicing grid. Grid #J.
Triturate and press in flat filter cloths or bags.
Wash thoroughly. It is not necessary to cut up spears before juicing. Fill housing with as large a bunch as possible with soft tips pointing down before starting the motor. While triturating be sure to keep some in the housing at all times to avoid throwback. When finished, leave pusher in the tube until you have turned off the motor.
